Cold Roast Chicken with Lemon and Herbs
2 teaspoons of fine dried herbs
1/2 teaspoon of poultry seasoning
1/2 teaspoon mustard
1 teaspoon of salt
A pinch of flaked garlic
1/2 teaspoon black pepper
1 whole chicken
2 tablespoons of olive oil
Mix the fine herbs, seasoning, mustard, salt, flakes garlic and black pepper.
Clean the chicken and remove the kids.
Place the chicken in a pan of approximately 23x33cm.
Spread 1 and a half tablespoons of the herb mixture inside the chicken and use the rest on the outside of the bird.
Squeeze the two lemons and mix the juice with the oil.
Pour the olive oil mixture over the chicken.
Bake in the preheated oven for an hour and a half.
During this period, water the chicken several times with the oil mixture.
