- 100 ml of warm milk
- 200 ml of warm water

- 2 tablespoons of sugar

- 100 ml of Oil
- 650 g of Flour
- 1 egg
- 500 g Smoked Mortadella

Preparo
Let's start by preparing the dough for our bologna bread, then separate the ingredients.
- In a large bowl, place the warm milk, warm water, yeast, sugar, salt and oil and mix well.
- Then gradually add half of the wheat flour, passing through a sieve to avoid those lumps in the dough.
- Add the egg and the rest of the flour little by little.
- Knead the dough for approximately 5 minutes
- Cover the bowl with a cloth and let it rest for 20 to 30 minutes.
- Let's prepare our filling now. Cut the Fried Smoked Mortadella into cubes and place in a bowl to make the seasoning.
- Add the green smell, chopped olives, mustard, oregano, cream cheese and olive oil and mix well.
- All ready? Roll out the dough with the help of a rolling pin and in the size you want.
- Add the stuffing and roll up like a roulade.
- Place on a baking sheet and brush with beaten egg yolk with the help of a brush.
- Bake in the oven for 30 to 40 minutes or until golden brown.
